“Live kitchen”

Aoki Shoten, as a fruit specialty store founded in 1924, is engaged in a service that allows many people to know the true splendor of fruit. Among them, the fruit bar business Juice Kobo karin says, “The finest fruit freshly squeezed. As you can see, we use 200 fresh and seasonal fruits, and after we receive an order, we squeeze the fruits in front of our customers, and we have 200 handmade fruit bars.

Since the time of our founding, the concept of creating a store has been a “kitchen”, and we have not changed our “thought” to provide customers with freshly-made food. The boundary between and was getting higher and higher, and the concept of making it in front of me was fading.
Also, since the main commercial material for the interior was stainless steel as it was in the kitchen at the time, the image people have today was closer to that of a kitchen rather than a kitchen.

So, I launched the concept of “Live Kitchen”, and proposed a store that eliminates the barriers between customers and employees and allows friends to start chatting with each other across an open kitchen.

Actually, we created a counter with a height of 90 cm, integrated all the functions into it, and designed it to demonstrate all the production processes in front of the customer.

In addition, this time we were asked to have seats in the store, so we prepared a space dyed with one brand color.
