“Live Kitchen”

Aoki Syoten is a fruit shop that established in 1924 and continues to offer various services to tell people the goodness of the fruit. Above all “Kajyu-Kobo Karin” provides made-to-order fruit juice in front of customers so that it is very fresh and people can enjoy seasonal fruits.
The concept of shop design is “kitchen” since they started their business and they always keep it in mind to provide the best fresh fruit juice to customers. If I attach importance to the process flow, however, it becomes harder to keep the same eye level with customers. Besides, it seems more like a restaurant kitchen than a home kitchen because of the use of stainless steel, which people over 50 years before thought a suitable material for the home kitchen.
I propose a new concept of “Live Kitchen” that staffs and customers can become closer as if they were friends and had a good time around an open kitchen.
Actually I put all the functions together on a counter 90cm high and staffs perform all the process of making the fruit juice in front of customers.
I hope a new relationship between staffs and customers will start.
